
In Hyderabad, we are lucky to be indulged in two kinds of “mixing ceremonies”, seasonal in timing. One is the more-prevalent cake mixing ritual, celebrated by star hotels and standalone restaurants in winter, and added to this is the more recent and refreshingly hyper local ritual of Avakaya mixing celebrated in summer. Recently, Adi the Telugu speciality restaurant of the Leela Hyderabad hosted a mango Avakaya mixing ceremony and it was a hands-on (literally!) experience. Cut and chopped mangoes were mixed in “Ava” or mustard powder and red chilli powder, with rock salt and sesame oil added. After pouring them into ceramic containers we added more oil on top and then it was sealed. Three days later, the fermentation process woupd be complete and the Avakaya would be ready to eat, informed the good chefs of @theleelahyderabad and the hotelier about town Rajesh Gopalakrishnan who is also the GM of the property, who was seen mixing the Avakaya with great prowess. A few expats, home chefs and media assembled had a good time with the mixing, followed by high tea consisting of masala tea, Strong filter coffee, and traditional Telugu snacks like Mirchi Bhajji , Gavvalu, Sakinalu, keema balls, laddoo and feni.
