
@zega.hyderabad has been quite the buzz word, when it comes to a contemporary showcase of best pan Asian culinary traditions. The two day pop up by Goa-based Thai restaurant @firebackrestaurant which concludes tonight ie was a stunner. The food menu @firebackrestaurant (now in Goa and Mumbai) has been curated by Michelin starred chef David Thompson, considered an authority on global Thai cuisine and their executive chef Kaustubh Haldipur. The first offering at a preview table, which was plated more on the lines of an amuse bouche was nothing short of magical, plump pomelo tossed with roasted peanuts/coconut in a tangy tamarind dressing, plated on a betel leaf which wasn’t as pungent as our Indian betel leaf. This wasn’t the only Thai dish which was different in the meal. Equally distinct were the delightfully tangy-sweet Pineapple Som Tam in place of the more popular Papaya som tom though I felt it could have done with more condiments (you know the peanuts, Birds Eye chilli, lemongrass, kaffir lime leaves drill) and the Pumpkin/Sweet potato in Gorlae sauce which was distinct and scored over the chicken version. The Massaman lamb curry teamed with jasmine rice was everything a main course should be: hearty, fulfilling & delicious ! The Cashew nut pudding, tantalizing with its caramelised dark shade and with a creamy, smoky flavour was again I savoured as a Thai dessert for the first time & I was floored! Didn’t miss the Tub Tim Grok (the water chestnuts rubies in coconut milk) at all for a change! 😊 Since the Thai-inspired cocktails didn’t feature on the menu presented, we will skip the beverages review this time. @firebackrestaurant is slated to open in Hyderabad later this year, so cheers to that !
