When the uber creatively gifted Chef Vignesh Ramachandran joins forces with Hyderabad’s very own and successful restaurateur Sampath Srinivas Tummala (of the brand Spicy Venue fame), to start off a F&B venture, you can be assured of culinary magic. Chef Vignesh was on the Conde Nast list of 40 chefs under 40 to watch out for this decade and he has amply proved his culinary credentials, if you have tried his tasting menu at Green Park, Hyderabad. Now @coffeesangam he has created a menu which is classic with a modern tweak and also classics/modern plates just the way they were meant to be. I was smitten by the addictive peri peri fried Punugulu and the pista-dusted mini ghee idlis soft as hell. The cheesy omelette , the cheese chilli toast using white bread harks back to an era when guilt free eating was the norm , in fact no gult was ever associated with eating! My other faves from the tasting trials were the cashew-embedded fish cutlets paired with soya Koora Perugu pachadi and definitely the Channa Hummus (coriander leaf infused oil in place of olive oil) with Poori and tomato salsa. Though tbh, didn’t care much for the Korean bun with an Avakaya mayo kind of filling. I ditched filter coffee for some tender coconut boba tea as it was too hot (having gone in the afternoon) and tried some of the most avant garde desserts I have ever had. Imagine a croissant filled with the same Chana dal-jaggery filling of Telugu dessert Bobbatlu. Or even the bun Maska with a white butter and palm sugar filling , delicious to the core. My first outing @coffeesangam tells me that this will be a place which spells happiness guaranteed. Now eagerly awaiting their second collaborative venture @theta.theta.telugu !
