
Assamese cuisine is among the most underrated regional cuisines of India, perhaps because it has been little promoted on the commercial F&B industry narrative. “Mamazaki”a “contemporary culinary pop up” of Assamese/north-eastern cuisine by Guwahati-based chef consultant Farha Naaz at Raen Chefs Studio @theleelahyderabad is therefore worth applauding. More so because the execution of the menu , Assamese classics in a contemporary plating, is in one word brilliant. Using minimal spices, fresh seasonal ingredients, traditional Assamese cooking techniques including Khar (extracting and filtering the raw banana peels ash water known for its alkaline and hence highly nutritive properties. Each dish presented was unique, beginning with the very engaging Orange Blossom Salad , pickled beet, poached plum and orange segments in a honey-chilli-garlic dressing on a bed of creamy labneh and the chilli oil made of red hot Bhoot Jolakia peppers. This one tasted as lovely as it looked, with pops of orange , pink and plum, sweet-tangy-and a spicy finish at the end of every bite. Another absolute masterpiece was the Joha Yakhni Arancini using the short-grained, fragrant Joha rice which is grown in Assam. So the Yakhni-style Joha pulao balls with a mutton filling and plated in a bhuna onion gravy reduction, with raw mango apple slaw and a chilli mint aioli. Also outstanding were the Maati Dali Mangsho , lamb chops simmered in black lentils and served with the cutest miniature luchi spiked with panch phoron. The Patot Diya Maas fish in mustard, coconut paste, steamed in banana leaf parcels (eggplant option too) is a healthy and light option for weight watchers. Outstanding, rare, and gourmet, however, was the Omita Khaar soup made of raw papaya and filtered, banana peel ash Water. Hearty, smooth and fulfilling at the same time, the soup encompassed the unique Khar part of Assamese cuisine. Hando Guri Saah Mascarpone : Roasted sticky rice flour, Assam chai mascarpone candied ginger and sesame brittle all added up to make for a magically sweet ending.
