
@agirlfromthehills aka Sherry Mehta is the undisputed champion, when it comes to curating meals from Himachal (having grown up there as a Punjabi) and unchronicled Punjab (dishes belonging to undivided Punjab). Trident Hyderabad in its quest of offering distinct culinary experiences to its diners is currently hosting a pop up titled Culinary Tale of Unchronicled Punjab curated by Sherry and which as the charming chef promised us, would steer clear of usual suspects of Punjabi food promotions: butter chicken and dal makhni! Sherry kept to her promise as the lunch preview to which some of us were privvy was in one word extraordinary from the word go, right from the soul-warming carrot kanji with its tangy, robust flavour, with a distinct mustard aftertaste and the brilliant Namakmandi ka chaap inspired by Peshawar’s famed meat market, where salt & smoke are the main players. The Bhang Jeeri Jhinga (cumin and hemp seed flavoured prawns barbecued) and the verdant green Bathua Nyoje (pine nuts) Kebabs were again superlative. The breads basket was a source of joy to all, especially the Doli Roti (moong dal filled wholewheat puris which used to be traditionally carried by brides in wedding palanquins to combat hunger on a long journey, Kesar ki Paronthi and Peshawari Naan (with a mawa-nuts filling) which were all works of perfection. The Paani Phal (water chestnuts)ke kofte was a novel offering for me and very pleasant at that! For desserts, the coup de grace was the Kaali Gajar ka halwa though I loved the Seb ki Phirni better as I’m not much of a gajar ka halwa fan! This food promotions is recommended for those who value rarely found recipes and who enjoy every flavour of slow-cooked food and who take time over their meal. The festival is on for lunch & dinner for both a la carte and set TDH menus until January 17th.
