When it comes to an education in hotel management IIHM Hyderabad has been setting goals in terms of its unique student chef interactions vis a vis the world of hospitality. Recently, (actually last month in February so this post is quite delayed because of personal exigencies) the International Young Chef Olympiad hosted by IIHM including in Hyderabad offered guests a wonderful sampling of dishes from varied cuisines put up by young chefs belonging to different nations like Greece, Australia, Uzbekistan, Kazakhstan, Nigeria and Timor Leste, which is among the youngest countries in the world, having been founded in 2002. Intriguingly, Timor’s capital is also called Dilli! The fabulous green, outdoor environs of The Glass Onion in Gachibowli and a free flowing bar and delicious pass arounds added to the party vibe but what was absolutely brilliant were the counters put up by hotel management students from the different participating nations as mentioned. Personally, I loved the Philippines shrimp soup called which apparently uses morning glory as one of its ingredients though they had used Bok Choy as a substitute. Light, healthy and flavourful,it deserved its place on the best three dishes of the Olympiad. I also loved the chicken cutlets of Kazakhstan as well as the Uzbek samosa and the Australian entry of Macadamian Pilaf with Roast chicken. At the end of the day, it was a grand confluence of global flavours, culinary sensibilities and cultural traditions in an easy, harmonious environment. As one of the posters read, “Food Unites the World!” The only bummer was the low lighting outdoors which didn’t quite make for great photos on the iPhone. But then, the experience we carried back was very special. Thank you @iihmhyderabad and @jearnestimmanuel for your warm hospitality, as always!
