
Learn how to make this bold and flavorful Red Thai Curry Ramen at home. A spicy, creamy noodle soup packed with Thai-inspired ingredients – ready in under 30 minutes! 🧄 Ingredients: 1 tbsp butter 1 tbsp spring onions 2 cloves garlic 1 tsp fresh ginger 2–3 tbsp red Thai curry paste Veggies of choice - mushroom, carrots 1 can (400ml) coconut milk (full-fat for creaminess) 1 tbsp peanut butter 3-4 kaffir lime leaves 1 tsp lemon juice 1 tbsp chilli oil 2 portions instant ramen noodles 🔪 Instructions: In a large pot, heat butter. Add garlic, spring onions and ginger, sauté for 30 seconds. Toss in the mushrooms and cook. In the same pan sauté some carrots. In a pan add red Thai curry paste, coconut milk, kaffir lime leaves, seasoning from the ramen packet and peanut butter. While the broth simmers, cook ramen noodles separately according to package instructions. Drain and add to the broth. Add some leftover noodle water. Add your mushrooms and carrots, along with a fried egg. Finish with a squeeze of lime and extra chili oil if you love heat!
