
Sweet, tangy, spicy and creamy—all in one bowl. I made Chef Vikas Khanna’s pineapple curry, that even @farahkhankunder loved 🥰 🥘 Ingredients Fresh pineapple – peeled and cut into chunks Coconut milk – 1 cup Rice flour – 2tbsp Coconut oil Mustard seeds Cumin seeds Turmeric powder Green Chillies, chopped Fresh ginger and garlic Curry leaves, chopped Red chili powder salt to taste Lemon juice (from half a lemon) 🍳 Method In a pan, heat coconut oil. Add mustard seeds and cumin. Once they splutter, stir in ginger, garlic, green chilies. Pour in coconut milk, stirring continuously. Add rice flour. Season with turmeric, salt, and a squeeze of lemon juice. Prepare the Pineapple Toss pineapple chunks with chopped curry leaves, turmeric powder, salt, and red chili powder. Let it sit briefly. Then sauté until slightly caramelised. Add the sautéed pineapple chunks to the curry base. Allow it to simmer until it reaches your desired consistency.
