
Coconut pudding - Silky smooth coconut bliss in every bite 🥥 🌴 🌿 Ingredients: Freshly coconut – 1½ cups water – 1¼ cups (for blending coconut) Cornflour (cornstarch) – 3 tbsp Sugar – 3–4 tbsp (adjust to taste) Chopped pistachios – 1 tbsp Dried rose petals - for garnish 🥣 Method: Blend: Add grated coconut and water to a blender. Blend for 1–2 minutes until smooth. Strain: Pour the mixture through a cheesecloth squeezing well to extract thick coconut milk. 🔥 To make the pudding: Pour the coconut milk into a saucepan. Add cornflour and sugar and heat gently on low-medium flame, stirring until sugar dissolves. Cook until thick: Continue to stir and cook for 5–7 minutes, or until the pudding thickens and turns glossy. It should coat the back of a spoon. Set the pudding: Pour into small bowls, Let it cool slightly, then refrigerate overnight.
