Kakatiya à la Française was one such evening—an imaginative collaboration that beautifully blended the bold flavours and ingredients of Telangana cuisine with the finesse of French culinary techniques. Curated by celebrated Chef and photographer Michael Swamy, who is in Hyderabad in collaboration with The Culinary Lounge, this exclusive dinner reimagined familiar regional ingredients in an entirely new way. The menu was a fascinating culinary journey—from Chenchu Honey Chilli Chicken, inspired by the honey-harvesting traditions of the Chenchu community, and a comforting Drumstick & Butternut Squash Bisque, to a delicate Chilli-Glazed Sea Bass en Papillote with coconut chilli emulsion. The highlight of the evening was the Mutton Pulusu en Croûte, where Telangana's rustic mutton pulusu was transformed into an elegant French-inspired creation wrapped in flaky puff pastry. Equally memorable were the playful interpretations of local flavours, including Pongal with French Sabayon, Chocolate Paan Truffles, and a perfectly finished Filter Coffee with French Vanilla. What made this dinner truly special wasn't just the food—it was the storytelling. Every course celebrated Telangana's produce, traditions, and culinary heritage while embracing the elegance of French gastronomy.
