The buzz has been building, and after a recent visit, I can confirm: Bomba Pizzeria & Taqueria has officially landed, and it's a beautifully delicious mess. Situated in the Good Earth Trade Tower, this isn't just another pizzeria. The moment you walk in, you get a sense of the place's mischievous spirit. It's got the comfort of your favourite neighbourhood joint but with the edgy confidence of a place that knows it's onto something. They call themselves "equal parts a pizzeria and a taqueria," and frankly, it's a concept so brilliantly simple you wonder why nobody thought of it sooner. It's the culinary equivalent of putting on a tuxedo and sneakers. It just works. The Kitchen's Best Hits The menu is a playground of inventive, almost playful combinations. I started with the Bomba Roots Salad, and let me tell you, this isn't your average bowl of greens. It was a beautiful riot of flavours and textures: the earthy sweetness of roasted beets and honey-glazed carrots, the creamy tang of smoked yogurt, and the herby kick of carrot top chimichurri. It's the kind of salad that makes you reconsider all future salads. Next came the main event. Now, I have a soft spot for Neapolitan pizza, but I was feeling adventurous. I went for the Fried Chicken Pizza on a thin crust. And what a choice it was. The combination of spicy pesto, crunchy fried chicken, and a drizzle of Bomba hot sauce was nothing short of a revelation. It shouldn't work, but it does. It's loud, it's unapologetic, and it's completely delicious. Of course, you can't go to a taqueria without trying the tacos. The Charred Corn Taco was simple but perfectly executed. The smoky corn was balanced with a hint of chipotle and a creamy jalapeño mayo, all topped with a sprinkle of bomba tajin for that addictive salty-spicy kick. It’s a taco that speaks for itself.
