India’s first sourdough pizza chain, they say, and in a mere two years, a veritable empire of 29 outlets across various Indian metropolises. From a solitary perch in Lower Parel, Mumbai, in 2022, to a dominant presence in Pune, Bangalore, Surat, Delhi, Indore, Ahmedabad, and now, my dear Gurugram – this isn't just growth; it's a culinary sprint. Ayush Jatia, the quiet force behind this delicious revolution, clearly had a vision that transcended mere commerce: to bring an authentic Neapolitan sourdough pizza experience to India. A lofty ambition, perhaps, but one they seem to have realized with remarkable precision. An Evening of Rustic Indulgence The Gurugram outlet, a spacious affair with a welcoming 70 covers, hums with an understated energy. My culinary journey, as it invariably does, began with the Garlic Sourdough bites. A seemingly simple prelude, yet in its subtle chewiness and aromatic garlic embrace, one could discern the philosophy that underpins Si Nonna’s – a reverence for the fundamental. This isn't your average pizza base; this is sourdough, where the mother dough undergoes a meticulous 24-hour fermentation. And for the purists among us, a significant detail: not a whiff of artificiality in their sourdough. This commitment to purity, in an age often defined by shortcuts, is commendable. Next, from the oven-baked repertoire, arrived the Spicy Chicken and Jalapeno. A delightful interplay of heat and savory chicken, perfectly complemented by the tang of jalapeno.
