You know the drill: a bit of everything, a master of none. But to my surprise, Food Exchange challenged that very notion and quite decisively overturned it. And as someone who has always believed that good food is never just about technique or presentation but about narrative, I found that line rather poetic. The restaurant is modelled after a modern-day market — vibrant, bustling, full of promise. Open kitchens offer a view into the heart of the culinary action. You don't just eat here; you observe, converse, anticipate. Chefs don't hide behind swinging doors — they showcase, celebrate, and share. I began with the Prawn Tom Yum Soup, a bowl that transported me instantly to a street-side café in Bangkok — the lemongrass sharp, the galangal subtle, the prawns fresh and just perfectly cooked. It was a bold opening act, one that set the tone for the rest of the meal. Where Fire Meets Familiarity The appetizers followed, and I was pleased to find they didn't play safe. The Bhatti Ka Murgh, deeply marinated and kissed by flame, had that rustic Punjabi warmth — robust, unapologetic, and deeply satisfying. The Crumb Fried Chicken, while simpler in its approach, played the perfect foil — golden, crisp, and seasoned with restraint. Would I return? Absolutely. But not just for the food.
