It's a curious thing, isn't it, how the culinary landscape of our cities shifts and evolves. One moment you're lamenting the dearth of truly exceptional Mediterranean fare beyond the usual suspects, and the next, a new establishment arrives, promising to transport you straight to the sun-drenched shores of Spain, Italy, Greece, and Turkey. This, my friends, is precisely what I encountered on my recent visit to The Fio Table, the latest brainchild from the House of Fio. A Mediterranean Mosaic in Gurugram The very premise of The Fio Table is to celebrate Europe across the Mediterranean. It's a grand ambition, mind you, to encompass the diverse culinary traditions from the rugged coasts of Spain and Italy to the aromatic spice routes of Greece and Turkey. But then, isn't ambition precisely what we seek in our dining establishments these days? A Tale of Two Coasts The menu, as any discerning diner would expect, is divided. There's the East Coast, a nod to the Levant and its rich, earthy flavours. Here, one finds the Grills—the smoky Greek Chicken Skewers with their sumac-laced onions, a testament to simplicity done well. And for a sweet flourish, the Vanilla Pistachio Phyllo, a dessert that manages to be both delicate and utterly indulgent. But for me, the true heart of the East Coast section lay in the Mezze. Spicy Feta, robust and piquant, demanding to be scooped up with fresh pita. The Falafel, crisp on the outside, fluffy within, just as it should be. And for something a little more substantial, the Spiced Grilled Chicken. To cut through the richness, a refreshing trio: Cucumber Tzatziki, cool and creamy; Eggplant Mutabel, smoky and profound; and the vibrant, nuanced Ajika Muhammara, a truly delightful pepper dip that whisks you away to sun-baked villages. Then there's the West Coast, where the spirit of Italy reigns supreme, with a nod to coastal grills and wholesome salads. I indulged in, and rather thoroughly, the crispy thin-crust pizzas. High-hydration dough, they boast, and it shows. The base was feather-light, a perfect canvas for rich tomato sauce and the molten embrace of mozzarella.
