And every once in a while, a place comes along that doesn't try to shock your palate with gimmicks or stunt cooking, but instead offers a perspective that is intelligent, evolved, and deeply rooted in flavour. Masala Synergy, the newest entrant on the ever-expanding culinary map of Gurugram, is one such place. Tucked away on the ground floor of M3M IFC in Sector 66, Gurugram, Masala Synergy is the brainchild of co-founders Yash Dogra and Shreya Kapoor. This isn't their first rodeo—the duo cut their teeth running a successful cloud kitchen in Delhi-NCR—but this marks their first foray into a full-fledged dine-in experience. And what an experience it is! The name Masala Synergy isn't just clever branding. It's a statement of intent. This is not a restaurant where Indian food is boxed into categories like North, South, or "Mughlai." Instead, the menu is a celebration of syncretic cuisine, a cultural confluence where paneer meets parmesan, where Andhra chillies tango with French beurre blanc, and where bal mithai is reimagined as a fondant. Let's begin with the Avocado Tokri Chaat. Served in a crisp kataifi tart shell, this dish blends Awadhi finesse with Mexican zest. Guacamole meets coriander chutney, while a tangy tamarind drizzle bridges continents and flavour profiles with casual brilliance. It's playful but not forced, and that’s a recurring theme throughout the meal. The Hummus Sampler, paired with delicate rumali roti crisps, offered a Middle Eastern x Indian marriage that worked far better than you'd expect. Earthy, nutty, and deeply satisfying, it proved that hummus doesn’t have to wear a keffiyeh—it can wear a Nehru jacket and still charm the room. And then came what might well be their signature dish—the Andhra Chilli Chicken with Beurre Blanc Sauce. It's bold. It's fiery. It’s everything Andhra cuisine promises, but dressed in the soft silk of French technique. Masala Synergy is a refreshing reminder of what happens when culinary cultures truly come together—not to dilute, but to enhance.
