
They say Delhi has no season for food festivals. A perpetual feast, if you will, where one culinary extravaganza seamlessly blends into another. Yet, even in this gastronomic merry-go-round, some events manage to pique the jaded palate, to stir a flicker of genuine excitement. My recent sojourn to the Holiday Inn, Aerocity, for their Lucknow Food Festival Jashn-e-Lucknow was precisely one such occasion. Answering the Call of Kebabs and Korma Let’s be honest, the moment you hear "Lucknow Food Festival," your mind immediately conjures images of melt-in-the-mouth galoutis and the fragrant whisper of Awadhi biryani. The promotional material, with its promise of "Nawabi flavours wafting through the air," only amplified the anticipation. And when they announced the arrival of Chef Mohammad Hassan, straight from the culinary heartland of Lucknow itself, well, resistance, as they say, was futile. This wasn't merely a festival; it was an invitation to a royal culinary celebration. A Royal Spread Indeed The setting was Viva at the Holiday Inn, a familiar enough space, but transformed, for a few precious days, into a conduit for the timeless treasures of Awadhi cuisine. Chef Hassan, it was clear, was not here to merely cook; he was here to narrate a delicious saga. My personal culinary expedition began, as it often does, with a certain methodical greed. First, the Murgh Musallam, a dish often attempted, rarely perfected. Here, it was a triumph – the chicken succulent, the gravy rich and aromatic, a testament to slow cooking and a judicious hand with spices. Then came the Gosht ki Nakhasi Boti, chunks of tender lamb, each bite a revelation of flavour and texture. Of course, no journey into Awadhi cuisine is complete without the Mutton Galouti with Ulte Tawe ki Roti. The galouti, as expected, disintegrated on the tongue with that ethereal quality that defines its legend. The roti, thin as a whisper, was the perfect vehicle. If you're in Delhi between July 18th and 26th (7 PM - 11 PM), or for a special lunch on July 27th (12:30 PM - 3:30 PM), and the siren call of true Nawabi flavours beckons, you know where to go.
