A New Address for the Night: Qmin Bar Comes to Chanakyapuri There was a time — and I don't think it was so long ago — when the idea of a "nightlife destination" attached to a Ginger hotel would have struck most Delhi diners as faintly absurd. Ginger, after all, built its reputation on smart, no-frills efficiency, not on the kind of theatre you associate with a big night out. So when I received the invitation to the launch of Qmin Bar at Ginger Chanakyapuri on the 11th of July, I confess I went along more out of curiosity than expectation. I left, several cocktails later, thinking that IHCL may just have pulled off one of the more interesting repositioning tricks of the year. The Address Itself Chanakyapuri is not, on the face of it, obvious bar territory. It is a part of Delhi more associated with chanceries and quiet, tree-lined avenues than with disco lights and late-night mixology. But that, I think, is rather the point. Qmin Bar doesn't announce itself with the brashness of a Hauz Khas Village outpost or the studied exclusivity of a Aerocity lounge. It sits instead as the newest feather in the cap of Ginger Chanakyapuri — understated on the outside, considerably more ambitious once you're through the door. What's on Offer The format, on the night I visited, was a clever one. There was a live sushi counter — always a good sign at any launch, since it forces the kitchen to perform in full view rather than hide behind a pass — and a Disco Jockey whose sets moved fluidly between something you could talk over and something you eventually found yourself dancing to. But the real story of the evening, as far as I was concerned, was happening at the bar itself. What Qmin is attempting here is not simply to open with a fixed, finished cocktail list, but to treat the bar as a live laboratory. The mixologists are, by their own account, in an active phase of research and development — testing new serves, playing with infusions that don't always announce their inspiration immediately, and refining the menu based on a genuine dialogue with technique, ingredient, and — crucially — the guest sitting in front of them.
