Sorbo, tucked away in Gurugram, belongs firmly to the latter category—though whether its narrative is entirely coherent is a question I'll come to shortly. The premise is intriguing enough: a bar-restaurant that promises to transport you to Morocco through cocktails and cuisine. The name itself—Sorbo, meaning "sip"—suggests a beverage-first philosophy, which in the age of craft cocktails and artisanal everything, is hardly a bad place to start. The Liquid Narrative I began, as one should at Sorbo, with their Casablanca Sunset. Now, I'm generally wary of cocktails with names that sound like they were dreamed up during a particularly enthusiastic marketing meeting. But credit where it's due: this one delivers. The Jose Cuervo Blanco (upgradeable to Don Julio for those feeling flush) is intelligently paired with charcoal-roasted pineapple—a technique that adds a smoky depth without overwhelming the fruit's natural sweetness. The addition of arugula is unexpected, lending a peppery bite that keeps the drink from veering into tropical cliché territory. It's the sort of cocktail that makes you pause between sips, trying to decode its layers. When Continents Collide And then we get to the food, where Sorbo's identity becomes rather more... shall we say, elastic? The Sorbo Gyoza arrives—pan-fried dumplings with a sesame dip. Excellent dumplings, mind you, with that perfect coral-gold sear that speaks of proper wok discipline. But unless I've missed a significant chapter in Moroccan culinary history, gyoza are about as Maghrebi as vindaloo. The Asparagus Tempura Sushi continues this theme of geographical ambiguity. Sweet potato tanuki (those crispy tempura bits the Japanese call tenkasu) and spicy aioli make for a satisfying bite, but we're now firmly in Japanese-fusion territory. The Aleppo Wings, at least, gesture toward the broader Middle Eastern neighborhood, those succulent pieces glossed with Syria's prized Aleppo pepper sauce—fruity, moderately spiced, entirely delicious. So yes, go to Sorbo. Order that Casablanca Sunset.
