
Himachali food perhaps ranks among the most underrated of regional Indian cuisines. I was happy, therefore, to meet the Noida-based home chef Nitika Kuthiala who is doing a wonderful job of keeping the flag of a great Himachali dhaam (feast or Daawat as the Pahadis would have it) going. The pop up Heritage Flavours of Himachal which runs through the week beginning November 15th to 24th at the Golconda Pavilion at @itckohenur is a splendid reminder of how simple, fresh and earthy flavours without unnecessary frills can work their magic . The beginning of the meal with the divine Kuilthe Sorua (shorba made of kulathi dal) was a precursor of the splendid meal to come, (scroll, scroll right to the end of the 20-slide carousel to view)and every dish was a standout, be it the perfectly puffed up Bhatooru (wholewheat puris made of fermented leavened dough) with the absolutely delectable Aloo Achaar (mashed potato, mustard oil til & amachoor) or the crisp and fluffy fish pakoras with a pink radish relish and paired with some delightful chutneys, especially the banana jaggery tamarind dip. or the sweet-tangy Kaddu Ambal, Sepu Wadi and the popular Himachali dish Aloo chana Madra. Last but not the least, the Rara meat curry was outstanding, especially the gravy. Desserts are few and simple like the Meethe Chaawal abd Budaana. Since the dhaam as it is served in Himachal happens to be vegetarian, there’s a lot for vegetarians to savour, but there are a few non veg dishes like the fish fritters, the kickass Mutton Rara curry. This wasn’t just a meal, it was an experience as chef Ritika @pahadipattal explained every course of the meal in detail, peppering it with anecdotes from her growing up years in Kangra valley.
