
I’m a bit embarrassed posting this reel on the concluding day of the pop up Guftagu Dobaara, running at Dum Pukht , the reigning Begum of all palates at the ITC Kohenur, Hyderabad. Guftagu curated by the ever-versatile executive chef Aamer Jamaal celebrates the tradition of kebabs over conversations, but then aren’t the best Indian culinary traditions such as Hyderabadi and Awadhi all about slow cooking over happy and relaxed times? So dont the finest restaurants like Dum Pukht promote the art of fine conversations or Guftagu at all times? There, now I feel less guilty! 😁 Apart from the splendid ambience where every corner spells quiet grace and a refined opulence, the service at Dum Pukht is as impeccable as the silverware and table linen. Let’s talk kebabs now. There were so many, but my favourites were Nimona (green peas plus soy chunks ) Seekh , the rather unusual but absolutely marvellous Zameen Ke Tohfe (mushroom and yam galettes cooked with herbs ), Anaari Chops (lamb chops flavoured with fenugreek and mustard in a yoghurt and fresh pomegranate sauce base) and the Mushroom Galouti which was of a more palatable texture, personally speaking, than the mutton Galouti. Luft E Dariya looked as regal as its name, jumbo prawns and all, but frankly I wasn’t very impressed by the taste, the cheese, peppers and saffron imbued sauce being a bit alien in the midst of all the Indian flavours. A bite of the Awadhi styled biryani and thete were collective Wah Wah’s around the table. So were the oohs and Aahs over the gold varq wrapped Kulfi and saffron Phirni.
