
Bengali cuisine is best represented by the twin influences of (erstwhile) east & West Bengal aka the Bangal and Ghoti culinary traditions respectively , the merits of which are a hot topic of debate with Bengalis worldwide, irrespective of which side of the divide he comes from. Bae of Bengal an ongoing pop up at Kanak, the Indian speciality restaurant @tridenthyderabad curated by the uber talented chef Gaurav Sircar brings to the fore these culinary nuances in a delightful presentation. Beginning with the spicy Jhaal Muri to the Aam Kasundi Channar (cottage cheese) Paturi , the Chingri Paturi version was equally delicious) to the stand out Chottogram Bhuna Mangsho Chop, every dish on the table was a smorgasbord of the flavours of Bengali cuisine. Chottogram aka Chittagong the second largest city of Bangladesh is noted for its pulled mutton cutlets against the minced mutton cutlets prevalent in West Bengal. This was a new for me and I must add they were drop dead delicious! Crisply fried on the outside, packed with well seasoned mutton with a pulled strand texture, this is indeed an iconic dish! The promotion highlighting iconic dishes from both regions, east & West Bengal will be on for both lunch & dinner until January 30th. Ilish Maach, which is the high point of Bangal or the present Bangladeshi cuisine is also part of the menu and we got to sample some delectable shorshe ilish maach. The Cholaar daal, aloor dom, Kosha Mangsho and Daab Chingri , Basanti Pulao, Kodai Shutir kochuri were all perfectly done, so were the Aam Sheddho /Tomato Khejur/PePe chutney. And the Patishapta (rice flour and coconut-jaggery pithe or cakes) with a generous drizzle of Nolen Gur syrup was the proverbial cherry on the top of a perfect meal, redolent with varied flavours and tastes.
