
Bengali food is a vibe. it’s about “caalcher”, about layers, nuances and fine sensibilities, as much about Thakurbaari Ranna from the great bard’s kitchen as it’s about Anglais-inspired cuisine, a bit of Mughal inheritance and a helluva lot of passion. Chef Gaurav Sircar is a Prabashi Bengali, who has been living outside Bengal in Mumbai for a while. But like they say, you can take a Bengali out of Bengal but you can’t certainly take Bengal out of a Bengali! The Mumbai-based chef has been trained at the Oberoi Centre of Learning and Development. Enough said. I have had the pleasure of sampling the @gaurav.sircar repertoire on a couple of back to back occasions and have come away with both a happy tummy and an enriched mind. A Bengali meal curated by the chef has classic Bengali flavours (Bangal or Ghoti, doesn’t matter), with global plating sensibilities This current one running at the chef studio Raen @theleelahyderabad until tomorrow Sunday night called Pritir Kotha (matters of love/affection) was a perfect showcase of regional cuisine (sans any meddling with the core essence of the Bengali flavour palette) in an international avatar. Let me refer to two outstanding examples from the menu: The Makha Musuri Tartlets and the Chingri Malai bisque served with puffed rice savoury cookies which were a brilliant interplay of flavours, both subtle and strong. The humble Makha Musuri, a staple with regular bhaat-daal kind of meal got a glam makeover as crisp tartlets and garnished with another unique Bengali ingredient : Bandel cheese. For those who love Bengali food the way it is (my spouse included), there’s enough out there, Kosha Mangsho, Cholaar Dal, Dhokaar Dalna, Sorshe Maach with Gobindo Bhog rice and the works to keep you happy. The Lady Canning in a custard & vanilla bean sauce was a cleverly apt reminder of how Bengali and English cuisines were/are inspired by each other. Don’t miss Pritir Kotha, it ends on Sunday night ie August 3rd. There’s only a dinner and not lunch slot on Sunday as @raen.hyderabad does a Sunday brunch.
