Families pick sides. Bragging rights last all year. In tucked-away workshops, artisans restore the very violins and cellos used in that battle. 👉🏻 And the food? A 400-year-old restaurant still serves dishes no other place in Spain makes; like olleta, a bean-and-pork stew so steeped in history it’s only cooked on Thursdays. The family’s been here for centuries, but with no heirs, they’re fighting to keep the recipes alive. 👉🏻 Even Buñol’s medieval castle shares the town’s genius—water wells and grain stores engineered for siege survival, long before anyone thought to throw a tomato in protest.
