
Zega at Sheraton Hyderabad recently hosted a special “Progressive Hakka Chinese Cuisine” pop-up by celebrated Kolkata-based Chef Katherine Lim, known for her mastery of Chinese flavours and her signature Lap Chong sausages. The festival showcased an impressive line-up of traditional and modern Hakka dishes, starting with her beautifully executed Hakka Salt-Baked Chicken and Hong Kong–Style Corn. What truly stood out for me were the bold, aromatic flavours of the Xinjiang Spiced Mutton, the addictive Tangra-Style Sticky Chilli Wings, and the wonderfully textured Hakka Yam Abacus Beads. The highlight, of course, was the Hakka Rice with Lap Chong Sausages - rich, smoky, and deeply satisfying.
