I've watched @curtisstone 's episode of @masterchefau multiple times this season, all for that amazing Pork Fillet with Citrus Beurre Monté and Pistachio Dukkah. I was obsessed with this! The only problem? I didn't have fennel or finger lime. Plus, I definitely didn't have a professional water bath to cook the tenderloin perfectly. So, "desi jugad" kicked in 😁😁! I swapped the braised fennel bulb for brown-buttered mushrooms and replaced the finger lime with our very own gondhoraj lime. And for the water bath? I used the "bhapa" method!
