
▪︎In Odisha day after Kartik Purnima is "CHADA-KHAI" which literally means "eating something again which one left/quit eating". ▪︎Basically Chadakhai is a cultural food festival of Odisha where people start eating few vegetables, spices and non-veg after refraining for a month during Holy Month of Kartik. Officially yesterday on Tuesday it was chadakhai but many people are observing it on Wednesday since mostly people eat non-veg in Odisha. So Chadakhai doesn't mean that only eating of non-veg but can be observed by eating certain vegetables like bitter gourd, cauliflower, carrot, beet etc on the very next day Kartik purnima. But somewhere we have glorified eating of non-veg on the particular day. ▪︎It is believed that one should eat Fish first on Chadakhai not any other meat since fish is considered as auspicious. This is a flavorful non veg dish which comes out well with winter cauliflower. This dish is more prominent in parts of Northern Odisha district & West Bengal. METHOD: ● Clean,cut & separate the cauliflower curd into medium size. ● Saute for 15 mins it with salt & turmeric i.e half cooked & keep it aside. ●Clean, process and marinate the 500 gms fish with salt & turmeric for 5 mins. ● Heat a cooking pan & add 3-4 tbsp of mustard oil. Then fry the marinated fish till it turns light brown & crispy on medium flame and keep it aside. ●Boil of fry one medium sized potato (cutting into 4 piece) & keep it aside. ● Use the same cooking pan with the left out oil, add 1 bay leaf, 1 medium sized onion & saute it till turn into light brown. ● Add 3 tbsp of onion-garlic-ginger paste, teaspoon of turmeric powder, tbsp of coriander powder and saute till the raw smell disappears. ● Then add 1 chopped tomato and saute till it becomes soft & the oil separates. ●Now add the sauted cauliflower & it's green, fry/boiled potato into the sauted masala and add 2 small cup of water & mix all well. ● Add salt to taste and pinch of sugar & boil till it gets cooked. ● Finally add the fried fish & 2 slitted green chilli into the gravy and cook for another 5 mins. ● Add some fresh green coriander and serve hot with rice. #chadakhaispecial #foodreel #reelsinstagram #fhulakobi
