Mix veggie sabji😋 I never thought vegetables will be as tasty as junk. Starting a day with saluting the sun.. ok, I meant suryanamaskara🙏 followed by a perfect plate of healthy nutritious breakfast is a boost and a kick start for your craziness to drag through out the day. Here's my breakfast recipe with my kinda perfect pulkas (need not be round like a sun right!😅) Ok..So all you need, 🥕bhendi(ladies finger) 🥕French beans 🥕carrot 🥕capsicum 🥕potato 🥕onion 🥕tomatoe 🥕cumin seeds 🥕hing 🥕curry leaves 🥕red chilli powder 🥕salt 🥕pepper 🥕coriander powder 🥕garam masala 🥕kasuri methi Add about 2tbsp of oil in an iron kadai(preferable when you have iron deficiency) let heat then add abt a tsp of cumin seeds let crackle then add in a pinch of hing and add 1 medium sized onion sliced. While the onion turn translucent add in some curry leaves and let them splash in the hot oil. Then add in dry masala powders so first goes in 2 tsp red chilli powder followed by 1 tsp turmeric powder then 2 tsp coriander powder and a half tsp pepper powder. Cook the masala then add about 2 tomatoes roughly chopped along with lil water and add salt to taste. Give few stirs and mix the masala and ket cook till the tomatoes become soft and mushy. Later, goes in your diced veggies to the masala and give some stirs and mix well. Cover with a lid and let cook on low flame. Give some quick stirs in intervals so that the veggies wont burnt up or stick in the bottom. And finally, when your veggies are well cooked and your potatoes are soft, add in a tsp of garam masala and some crushed kasuri methi to your curry for some taste and aroma and give it a quick mix.
