A warm, comforting millet twist to your classic khichu – healthy, gluten-free, and delicious! Ingredients 🟢 Mix: 1 cup jowar atta (sorghum flour) 1/2 tsp haldi (turmeric) Salt to taste 1 tbsp ginger-chilli paste 1 cup curd 1.5 cups water 🔴 Tempering: 1 tbsp oil 1 tsp jeera (cumin seeds) 1 tsp Ajwain(Carom seeds) 1 tsp til (sesame seeds) A pinch of hing (asafoetida) 8–10 curry leaves 2 tbsp fresh coriander, chopped 🌶️ To Serve: A drizzle of groundnut oil(optional) A sprinkle of achaar masala or red chilli powder Instructions ✅Prepare Batter In a bowl, whisk together jowar atta, curd, and water until smooth. Add haldi, salt, ginger-chilli paste, and ghee. Mix well. ✅Tempering Heat oil in a kadhai. Add jeera, Ajwain, sesame seeds, hing, curry leaves, and fresh coriander. Let them sizzle. ✅Cook the Khichu Add the jowar batter to the kadhai.
