Mushroom Paper Fry- An easy and flavoured south Indian starter or side dish recipe made with sliced mashroom and paper powder. Typically in South India, this dish is made as a side dish to sambar rice. This is one of the femous vegetarian starters. Mashroom are very low in calories but are loaded with minerals and nutrients and is an ideal addition to our meal. For masala powder Black paper - 1 tbsp Fennel seed - 1/2 tsp Cumin seeds - 1/2 tsp Coriander powder - 1/2 tsp Other ingredients- Clarified butter (Ghee) - 2 tbsp Mustered seed - 1 tbsp Dried red chilli - 2 Ginger (finely chopped) 1 inch Onion ( sliced) 1/2 Curry leaves - 6,7 Button Mashroom - 300 gram (sliced) Capsicum - 1/2 (sliced) Salt - 1/2 tsp (as required) Instructions- Firstly in a small mixi jar, take black paper, coriander seeds, cumin seeds &fennel seeds and blend to course powder. Now in a hot wok add 2 tbsp of ghee, mustard seeds, dried red chilli, curry leaves, chopped ginger & onion and saute until onions shrink slightly. Now add mashroom and stir fry on 2 minutes at high flame and add capsicum and then stir for two minutes. Now add the prepared masala powder and salt mix well and cook two minutes. Finally enjoy mashroom paper fry with chapati or rice. . .
