Make traditional Banarasi tamatar chaat for lip-smacking snack. This lip-smacking tamatar chaat is a melting pot of various flavours. Banarasi tamatar chaat recipe is a mish-mash of potatoes and tomatoes flavored with spices, coriander and mint leaves, lemon juice and sev or namak para. Recipe- In a pan heat 2 tbsp ghee add 5 chopped cashew and grated ginger. let's the aroma rise now add 1/2 tsp chilli powder,1/2 tsp turmeric powder,1/2 garam masala,1tsp cumin powder, 1tsp chaat masala and 2 tbsp tamarind sauce. Saute on low flame for 1minut. Now add 2 boil and chopped tomato 1/2 tsp salt and saute for 2,3 minutes. Further add 1potato and saute well. Add one cup water and mix well. Cover the pan and boil for 5 minutes. Further add chopped coriander and mint leaves and mix well Tomato base is ready Roasted jeera sugar syrup for chaat- In a pan take1cup water, add 3tbsp sugar , 1/2 tspn cumin powder,1/2 tsp chaat masala 1/2 tsp dry ginger powder , 1/2 tsp red chilli powder mix well and boil for 5 minutes Banarasi tamatar chaat is final plating- tomato and potato mixture top with 1tsp ghee and 2 tbsp prepared rosted jeera sugar syrup, coriander leaves and crushed namak para or sev.
