Apologies my Insta family for being inactive for two months now I'm back and I hope to bring some amazing content for you all. Here it is a fresh summer dessert, perfect to serve to your family. The combination of carrot cake cubes topped with whepped cream and fresh mango. Carrot trifle with mango - Ingredients- For cake- whole wheat flour - 1 Cup Baking powder - 1 TSP Baking soda - 1/2 TSP Cinnamon powder - 1 TSP Vegetable oil - 1/2 Cup + 2 tbsp Castor sugar - 1/2 Cup Brown sugar - 1/2 cup Egg - 2 Vannila extract - 1 TSP Grated carrot - 1 +1/2 Cup Some crushed walnuts Layers Mango rough chopped - 1 Cup One cup whepped cream or butter cream Instructions - Pre-heat the OTG to 180 degree and line a 8 inch round cake pan with parchment pepar. In a bowl whisk together the flour baking soda, baking powder and cinnamon powder. In a seperate bowl, beat the oil , sugar,egg and vanilla extract 5,6 minutes. Fold in the dry ingredients in to the wet without over mixing, fold with the carrot and walnuts. Transfer the batter into the cake pan and bake 180 degree for 30 to 35 minutes or until a toothpick inserted in to the centre of the cake come out clean. Assemble Once cake cool cut into the bite sized cube. Start by filling each glass with 4 cubes of cake layered with cold whepped cream then chopped mango. Repeat until you have to layers of each.Top with one mango slice and serve immediately. . comment below if you like it ❤️ . .
