That rustic flavour, the intermingling of spices (thanking the spicemix from Khari Baoli- coming up on next post). The recipe is very different in every household. Ours is simply marinating mutton with powdered turmeric, coriander, cumin, red chilli, salt, hung curd, ginger garlic paste and keeping it untouched, sealed overnight. Just add some ghee, whole spices, saute and stir the mutton pieces along with onion and ginger garlic paste. After a while add tomatoes and just cover the lid and let the cauldron do its magic. Let me be realistic, there's no fixed time no matter who tells you 45 mins-1 hr- 2hrs etc. An avid cook should trust their own instincts and trust me when I say this, it works all the time. Just one magic ingredient - Cook with love. After a good few hours of cooking- which will involve the curry settling, formation of chars, sticky kadhai, sometimes difficult to even flip or stir- you know you're actually doing it the right way. Ensure in between you DO NOT add any extra spices. Pour little bit of warm water after the mutton has gained the colour you want it to reflect. Let it cook.
