Heat ghee/oil in a kadai. Use a boondi jhara (or perforated ladle). Pour batter over the jhara and tap gently so tiny boondis fall into the oil. Fry only for a few seconds—do not make them crispy. Remove and drain. When slightly warm, pulse the boondi once in a mixie for 1–2 seconds. Add sugar + water + orange colour to a pan. Heat until the sugar dissolves and forms a light 1-string syrup. Add the warm boondi to the warm sugar syrup. Mix well so all boondi absorbs the syrup. Add watermelon seeds and the let the mixture rest for 30 min. Take small portions in your palm. Press gently and shape into round ladoos. Garnish with silver vark and pistachios.
