
Episode 5 of - Dhaba Food At Home Dhaba style Mix Veg Step 1 - Kadhai Masala Kashmiri red chilli – 2 Coriander seeds – 1 tbsp Cumin seeds – 2 tsp Fennel seeds – 1 tsp Black pepper - 5 Dry roast all whole spices on low flame until fragrant. Cool and grind in a mixie. Step 2 - Tossing Veggies Ghee – 1 tsp Carrots, Green peas, Baby corn, Cauliflower (par boil), capsicum Add the chopped veggies to a hot pan along with ghee. Toss then for 5 min. Step 3 - Gravy Ghee Cumin seeds – ½ tsp Onion – 2 (chopped) Ginger – 1 tbsp (chopped) Garlic – 1 tbsp (chopped) Green chilli – 2 (chopped) Turmeric powder – ¼ tsp Coriander powder – 1 tbsp Kashmiri red chilli powder – 2 tsp Kadhai masala – 2 tbsp Hot water – as needed Tomato – 3 (chopped) Salt – to taste Heat ghee, add cumin, then onions. Cook until golden. Add ginger, garlic, and green chilli, turmeric, coriander powder, chilli powder, and kadhai masala. Add tomatoes + salt. Cook on low until tomatoes turn soft and mushy (add hot water as needed). Step 4 - Final Cooking Kasuri methi Garam masala – 1 tbsp Fresh coriander – a handful (chopped) Add all veggies into the gravy and cook together for 2–3 min. Finish with kasuri methi, garam masala, coriander.
