Episode 2 of Lazy Girl Dinners is here – one-pot masala khichdi that’s warm, hearty, and full of comfort. A drizzle of ghee on top makes it extra indulgent 💛 Perfect for those nights when you don’t feel like cooking but still want something cozy and homemade. Save this recipe for your next lazy day and try it tonight! Ingredients: Rice – 1 cup Toor Dal – ½ cup Moong Dal – ½ cup Ghee – 1 tbsp Oil – 1 tsp Cumin Seeds – ½ tsp Bay Leaf – 2 Onion – 1 large (chopped) Ginger – 1 tsp (chopped) Garlic – 1 tbsp (chopped) Green Chilli – 1 (chopped) Tomato – 1 large (chopped) Veggies of choice : Potato, Carrot 1, Cauliflower, Green Peas. Turmeric – ½ tsp Red Chilli Powder – ½ tsp Coriander Powder – ½ tsp Salt – to taste Water – 6–8 cups Garam Masala – pinch Kasuri Methi – pinch Fresh Coriander – handful Method: Wash rice and dals 2–3 times, soak 30 min. Heat ghee + oil in a pressure cooker → add cumin, bay leaf, onion, ginger, garlic, green chilli. Cook until onion soft. Add tomato + pinch of salt → cook until mushy. Add turmeric, red chilli, coriander powder → toss in chopped veggies → cook 1 min. Drain soaked rice/dals → add to cooker with 6 cups water + salt → pressure cook 4-5 whistles. Once done, gently mix khichdi → adjust consistency with hot water if needed. Finish with garam masala, kasuri methi, fresh coriander. Serve hot and add a dollop of ghee.
