Eggless Banana & Carrot Cinnamon Cake 🍰🥕 🍰🥕 Recipe : * In a bowl, mash 3 medium ripe bananas until smooth.
Add ½ cup sugar (brown sugar works best for moisture), ½ cup neutral oil, 1 teaspoon vanilla extract, and ¼ cup curd * In another bowl, add 1½ cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and ¼ teaspoon salt. Mix to combine evenly. * Add the dry mixture to the wet mixture and gently fold using a spatula.
Do not overmix. Fold in 1 cup grated carrots and ½–¾ cup nuts or raisins (optional) until just combined. * Pour the batter into the prepared loaf tin and level the top. Bake at 180°C for 45–55 minutes, or until a toothpick inserted in the centre comes out clean.
