Lime Cream Aglio Olio 🍝💙 Recipe : 🍝 In a pot, add water and a handful of dried or fresh blue pea flowers. Place it on the stove and let the blue colour extract into the water. Once the water turns deep blue, strain out the flowers. In the same blue water, add salt and a little oil, then add the pasta and cook until al dente. Strain the pasta and keep it aside, saving some of the blue pasta water for later. 🍝 In a pan, heat olive oil and 1 tbsp butter, add 4–5 chopped garlic cloves, lemon zest of 1 big lime, juice of one lemon, and fresh chopped coriander. Mix well, then add chilli flakes, salt and pepper. Stir again and pour in 2 tbsp fresh cream, a splash of milk and a dash of the reserved blue pasta water to loosen the sauce. 🍝 Let the sauce cook for a minute, then add the cooked pasta and let it simmer in the sauce for 3–4 minutes, tossing well until fully coated.
