CREAMY PUMPKIN SOUP 🎃 Made this creamy pumpkin soup in my @bergnerindia Triply Cooker, and I’m obsessed with how easy it makes everything! 🧡 Recipe : 🥘 Heat 1 tablespoon of butter or olive oil in a pressure cooker. Add 1 medium chopped onion and 3 cloves of garlic, 1 bay leaf, 2 roughly chopped carrots. Sauté for a few minutes. 🥘 Now add 300 g of pumpkin (peeled, deseeded, and cubed) salt, pepper to taste. Stir everything together for 2–3 minutes. 🥘 Next, pour in 2 cups of vegetable stock (or water mixed with 1 stock cube). Close the lid and cook for 3 whistles roughly 6–7 minutes after the pressure builds up. 🥘 Once the pressure releases naturally, open the cooker and blend the soup until smooth, strain it for extra smoothness. 🥘 Now add butter in a kadhai add your soup, and freshly grated nutmeg. Adjust your seasonings stir in 3–4 tablespoons of fresh cream or coconut milk for that creamy texture. 🥘 Serve the soup hot, topped with some fresh herbs like parsley, coriander, or chives.
