Grind once to a coarse paste. Add 700 g boneless chicken and grind again. 🍗 Add ¼ cup breadcrumbs, a handful of fried onions, fresh coriander, salt, chilli powder, Kashmiri red chilli powder, black pepper, dhaniya powder, jeera powder, and about 1 tbsp seekh kebab masala or chicken masala. Crack in 1 egg and 1 tbsp fresh cream. Grind everything together again until smooth. 🍗 If the mixture feels too soft, add a little more breadcrumbs for binding. Transfer the mixture to a bowl and give it a quick charcoal smoke. 🍗 Grease your hands with oil, then take steel or wooden seekh sticks and start shaping the mixture onto the sticks into long kebabs. Place them over an open gas flame and cook, rotating until golden and cooked evenly from all sides & gently remove the seekhs from the kebabs. 🍗 Heat a pan, add a little oil and 3 tbsp salted butter. Place the kebabs and a few onion rings in the pan and cook them together for about 10 minutes 🍗 In a bowl, mix ½ cup yogurt, ½ cup fresh cream, a pinch of kasuri methi, salt, chilli powder, black pepper, dhaniya powder, and bhuna jeera. Add a splash of milk and whisk until smooth and creamy. Pour this mixture over the kebabs in the pan and cook everything on low flame until the butter separates and the kebabs are rich and creamy. 🍗 Once done, garnish with more melted butter, a drizzle of fresh cream, and chopped coriander.
