Creamy Chestnut Mushroom Soup 🍲 🍲 Ingredients: • 5–8 chestnuts • 2 packets mushrooms (roughly chopped) • 1 large onion (chopped) • 5–7 garlic cloves (chopped) • 1 bay leaf (tej patta) • 1 tbsp butter • 1 tsp thyme • Salt & pepper – to taste • 1 cup water (or as needed) • ¼ cup fresh cream 🍲 Method: 1. Score the chestnuts with small cuts to make them easier to peel. Boil them until soft and cooked through, or roast them in the oven until tender. Once done, peel and roughly chop them. 2. In a pan, melt butter and add chopped garlic, onion, and a bay leaf. Sauté until the onions turn translucent. Add the chopped mushrooms and cook until they release moisture and start to brown. 3. Add the chopped chestnuts, thyme, salt, and pepper. Pour in 1 cup of water, mix well, and let it simmer for a few minutes until everything is soft and well blended in flavor. 4. Remove the bay leaf, transfer the mixture to a blender, and blend until smooth. Strain the soup for a silky texture, then pour it back into the pan. 5. Stir in fresh cream, adjust seasoning, and heat gently (don’t boil).
