
Himachali Siddu Recipe 🫔 🌰 Filling Ingredients Grind together into a coarse paste: * 1 handful soaked walnuts * 1 handful soaked almonds * 3 cloves garlic * 2 green chillies * 1 tbsp sesame seeds * Salt to taste * A small handful of coriander leaves 🥟 Method * In a small bowl, add 1 tsp yeast + ½ tsp sugar + 2–3 tbsp warm water. * Let it rest for 10 minutes until frothy. * In a large bowl, add 2 cups wheat flour + ½ tsp salt. * Pour in the activated yeast mixture. * Add ½ cup warm water gradually and knead into a soft dough. * Cover and let it rise for 1–1.5 hours or until doubled. * Grind soaked walnuts, almonds, garlic, green chilli, sesame seeds, salt, and coriander into a coarse, thick paste. * Punch down the risen dough. * Divide into equal balls. * Roll each one into a small circle (like a thick puri). * Add 1–2 tbsp filling in the center. * Fold and seal properly. * Steam the Siddu for 12–15 minutes until soft and cooked through. Serve hot with ghee, chutney, or a warm broth. . . . .
