Zaafrani Hyderabadi Biryani ,a royal biryani that carries the fragrance of saffron, the warmth of spices & the charm of Nizami kitchens. Ingredients – For Chicken Marinate: • Chicken – 1 kg • Garlic paste – 2 tsp • Ginger paste – 2½ tsp • Green chilli paste – 3½ tsp (adjust as needed) • Shah Zeera – 1½ tsp • Rose petals – 2 tsp • Cinnamon sticks – 3 • White pepper powder – 2 tsp • Turmeric powder – ½ tsp • Kashmiri chilli powder – 2 tsp • Coriander powder – 2½ tsp • Garam masala – 1½ tsp • Cumin powder – 1 tsp • Cardamom powder – ½ tsp • Fried onion – 1½ cup • Coriander leaves – ½ cup (chopped) • Mint leaves – ¼ cup • Lemon juice – 1 tbsp Second Marination: • Khoya (unsweetened) – ¼ cup • Curd – ½ cup • Oil – ½ cup • Salt – as required For Rice: • Basmati rice – 1 kg (soaked 30 mins, par-boiled 70%) • Whole spices – mix of cinnamon, cardamom, cloves, bay leaf • Salt – as required • Saffron strands – ¼ tsp soaked in 3 tbsp warm milk Dum it to perfection & let the magic of zaafran and spices unfold.
