Ingredient details as below : Shuwa Spice Powder Green Cardamom – 5–6 Black Pepper – 1½ tsp Coriander Seeds – 2 tsp Cumin Seeds – 1 tsp Cinnamon – 2-inch stick Bay Leaf – 1 Star Anise – 1 Cloves – 5–6 Dried Black Lemon – ½ Nutmeg Powder – ¼ tsp Dry roast lightly & grind into a fine powder Shuwa Paste Kashmiri Red Chillies – 10–12 (soaked in warm water for 30 mins) Tamarind – lemon-size ball (soaked 30–60 mins) Shuwa Spice Powder – 2 tsp Grind into a smooth, thick paste Chicken Marination Whole Chicken – 1 kg Lemon Juice – 2 tsp Vinegar – 1½ tsp Salt – as required Prepared Shuwa Paste – all Massage well, cover & marinate for 8 hours (or overnight for best flavor) Roasting Preheat oven to 200°C Roast chicken covered for 50–60 minutes Uncover in the last 10 minutes for a beautiful roast finish Mandi Rice Ingredients Olive Oil – 3 tbsp Whole Spices – 1½ tsp (mixed, incl. ½ dried black lemon) Onion – ½ cup, chopped Shuwa Spice Powder – 1½ tsp Turmeric Powder – ¼ tsp Mutton Stock – 1 cup Salt – as required Water – as required Basmati Rice – 800 g (soaked 30 mins)
