This bowl of Chicken Thukpa is more than just comfort it’s my little Nepali obsession in a bowl! Thukpa (pronounced thuk-pa) is a beloved Nepalese variation of the Tibetan noodle soup thukpa think hearty broth, slurpy noodles, veggies, and tender chicken for that perfect hug-in-a-bowl vibe. My first ever thukpa was at a restaurant I picked the cheapest option thinking, “how bad can it be?” It arrived. And…. Edible, but far from amazing.
