I kept seeing these thecha noodles everywhere… and I knew I’d end up making it. I didn’t overthink it. Just peanuts, garlic, chillies, coriander roasted everything and made a rough thecha. The smell itself was enough to tell me this is going to work. What surprised me was… I didn’t add a single sauce. No soy sauce, no chilli sauce, nothing. Just thecha and noodles. And it still worked. It’s spicy, a little smoky (because I slightly over-roasted it), and very different from the usual noodles I make. This is one of those recipes I’ll come back to when I want something quick but still satisfying.
