Nawab Wajed Ali Shah of Lucknow was detained at the Matia Burj fort in Kolkata where the Awadhi cuisine underwent a twist under local influence to result in what is now known as Islamic food of Kolkata. Gosht Dum Biryani, Chaap, Rizala and Tikiya Kabab are some of the dishes that the cuisine is known for.
