
Chef Bridget White, the most well-known expert on Anglo Indian cuisine is at Raen, the pop-up restaurant at The Leela Hyderabad. Author of 8 books on the cuisine, Chef Bridget's food is very subtle and full of flavours. Had a great time listening to various anecdotes about the history of the cuisine. The food served included Anglo-Indian style Mutton Vindaloo, Crumb Fried Chicken Cutlet, The Army Camp Soup (an onion based soup that was served in army barracks), Anglo Indian Fish Moilee, Pepper Okra and Potato Stir Fry. The desserts included Caramel Custard, Bread Pudding and Memsahib's Mess (my favourite). The fest is on till 12th July both for lunch and dinner.
