Summer isn’t complete without a jar of mango achar sitting on your kitchen shelf — quietly soaking up all the flavour and nostalgia. This recipe is ridiculously simple, needs no fancy technique, and the best part? You can store it for up to a year (if you can resist finishing it before that 👀). Made with raw mangoes, a handful of spices, and lots of love this achar is my go-to for making even the laziest meal exciting. Save this one. Your future self will thank you every time you open the jar. INGREDIENTS: - raw mango - sugar - gur - salt - vinegar - haldi powder - chill powder - dry red chilli - 5 phoron - mouri - jeera Process: 1. mango cube or water shape you want to give it to it. 2. in a pan add the mangoes, gur, vinegar & sugar soak for 30 min 3. In a dry pan add dry red chilli, panchforon, mourn & jeera 4. roast the masala and smash them 5. light the gas and add the soaked with mangoes 6. once the water comes to a boil add haldi & chill powder 7. Once the water starts to reduce also, the mangoes will get a little hard in texture add the masala.
