
The next day, leaving the Marbella coast, I ventured inland to Zahara de la Sierra, drawn by its olive trees. 👉🏻 Though the town’s name suggests a citrus heritage, olives now dominate, with emerald groves covering the landscape. Manzanilla, Arbequina, and Lechín varieties thrive here, producing Zahara’s prized liquid gold. 👉🏻 The commitment to quality is no secret. I embarked on a tour with Luis Lucero, owner of Oleum Viride, an organic olive oil producer. Amidst the traditional almazara or olive oil press, Luis’s passion for his craft was evident. Oleum Viride, a regional pioneer, was the first Andalusian olive oil to earn US FDA certification in 2004. 👉🏻 Luis’s journey doesn’t stop there. He continually innovates, creating new flavours and products. What struck me most was his “no waste” philosophy: discarded leaves feed goats, ground pits fuel fires, and excess water irrigates the olive trees. 👉🏻 The grand finale was a tasting that delighted my palate. I sampled pure extra virgin olive oil and its infused variations, each sip was a testament to Zahara’s dedication to this ancient fruit.
