
Detail recipe ⬇️🫶🏻♥️ Dough: • 2 cups water • 1 cup rice flour • 1 tbsp cornflour (secret ingredient for soft, non-greasy dough) • 1 tbsp ghee • Pinch of salt Stuffing: • 1½ cups fresh grated coconut • ¾ cup jaggery powder • 1 tsp ghee • ½ tsp cardamom powder • 2 tbsp chopped dry fruits • 1 tbsp rice flour (to keep filling soft, not watery) Steps 1) Make the dough 1. In a pan, bring water + ghee + salt to a rolling boil. 2. Lower the flame. Add rice flour + cornflour all at once. Stir continuously for 1–2 min until it comes together and leaves the sides (no dry flour). 3. Cover, take off the heat, and rest 15 min. 4. While warm, grease hands with a little ghee and knead 3–4 min to a smooth, soft dough. If it cracks, knead in 1–2 tsp warm water. Keep covered 5–10 min. 2) Make the stuffing 1. Heat 1 tsp ghee in a pan. Add coconut + jaggery. Cook on low till jaggery melts and the mixture turns sticky but not wet (about 5–7 min). 2. Mix in dry fruits + cardamom. 3. If it looks moist, sprinkle 1 tbsp rice flour, cook 1 min more so it turns dry and soft. Cool completely. 3) Shape • Grease palms. Take a lemon-sized ball of dough. Flatten to a disc with edges thinner than center. • Pinch 8–10 pleats (or use a modak mold). Add 1–1½ tbsp stuffing, gather pleats, and twist-seal the top. 4) Steam 1. Prepare steamer with boiling water. Line plate with banana leaf or parchment and lightly grease. 2. Place modaks with gaps, sprinkle a few drops of water on them, cover, and steam on medium for 8–10 min until the surface looks slightly shiny and non-sticky. 3.
